I agree, however those schools take taxpayer funding. I’m looking at a Hillsdale type university except with a STEM focus.

Although all (ALL) US universities have elements outside of STEM, schools that emphasize STEM include MIT (of course—the flagship of STEM), the Colorado School of Mines, and Iowa State University (the 19th century, land grant, science and agriculture universities were founded on the practical arts and this one leans toward STEM).
Notice that such schools tend to be of higher quality and prestige than non-STEM schools.
For alternative models of university curriculum, consider the non-US technical universities although they may have their own ideological problems. Consider the Ecole Polytechnique or the Hong Kong University of Science and Technology.
