I've never been too fond of boneless chicken. For some reason it doesn't cook well, and always seems to come out rubbery. I prefer to buy it on the bone and take the bones off myself if I need to.
Speaking of which, on the lighter side, you should have seen the looks on my kids' faces, years ago, when I told them I was planning to bone a chicken.
