Almost every Southeast Asian nation including Taiwan and Hongkong have wet markets.

They have been in existence long before the USA was born.

In St Louis the local farmer’s market not far from the Arch had everything from live chickens, ducks and rabbits, to frozen wild raccoon, butchered goat, fish, exotic spices, a bakery, local produce and produce from afar, a sausage maker and lunchmeat counter, etc. The live critters were in a stand enclosed by glass, though. The butcher shop also in another area, and the bakery and spice place were also closed off from the open air produce stalls. It was great.
