Humans have no chitinase, an enzyme that digests the hard exoskeleton. You have to remove this layer if you are to make human food out of them. The legs are pretty much pure chitin and have barbs so they would get caught in the intestines and make a blockage.

That is all true but its not the blockage that is much of a concern. I would imagine that blockage is just another day in the office for a surgeon. Handling intestinal abcesses and dealing with gastrointestinal perforation are a much more complicated and serious if less likely potential issues.
