I think I have red or heard that Popeyes uses lard to fry their chicken. That can’t be good.
There’s a growing line of thought/realization that lard is good to fry in.
Far better than any of the industrially-refined nut oils - corn, soybean, cottonseed, canola, etc.
From videos I’ve seen, they use a lot of lard to serve it!
