And even THAT isn't the deadline. Votes vote for electors, and the political parties tell the electors who to vote for. The "candidate" (putative president elect) can change AFTER the general election.
The system is designed to handle the circumstance of the nominee becoming unavailable after the convention, for sure, and even after the general election in November.

I will say this much. The campaign season is WAY too long and these people are smart to pop up three months before Iowa rather than a year before. How can anyone think we want to look at their dumb powerless faces for two full years before the election.

That is why you see articles from liberal outlets like the NY Times, WaPo and in this case AP add in the line:
"...as some Democrats express uncertainty about the party’s current crop of contenders."
It is all part of the show, bring out a bunch of weak acts first, and then let the star come on stage to grab the limelight.
