To: Cold Heart

Every country has their own version of “blue cheese.” England has Stilton, Italy has Gorgonzola....and on and on. Taste is subjective, so the winner means nothing to people in other countries and places. It is just a game, just as the “World” Series is.

I do not like Gorgonzola. It’s about the only blue cheese I will pass on.

Actually the tasting is quite scientific. I know one of the judges who is actually a Trophy Judge (the ones that taste and decide the winner after the general judges make their decision). Each cheese has certain requirements that can be quantified and qualified. The judge I know had her company’s tasters tested alongside chemical testing and the tasters were able to match the chemical analysis.

Your right in that someone may prefer a different flavor.

A lot of judges taste the particular cheese before it makes trophy. The average person may taste no difference at all in the top 5 cheeses of a type but a judge will.
