Apparently, the critters are tasty, and taste good fried. See "Can we eat our way out of the lionfish invasion?" Haven't tried them myself, but I don't eat a lot of seafood.

The tropical fish hobbyists who get tired of their fish could just eat them instead of dumping them, and save everyone the trouble.
