Correct. My wife is diabetic and we had a hard time giving up pasta . . . until we found the
Dreamfields brand which uses unprocessed carbs. I think there are a few other brands on the market as well, but Dreamfields is made right in the center of durham wheat country before the carbs can't get processed.
I eat chicharrones for snacks. They're crispy like chips but contain no carbs. All fat.
I make tortillas from them by grinding them up into a meal and adding creme cheese, eggs, water, garlic granules and ground cumin to make a batter.
Griddle the batter for a minute or two and fold in half for a delicious alternative to a process carb corn or wheat tortilla.
Some kind of pasta alternative could be made from them too.
