After I married a nice Canadian girl I tried malt vinegar on french fries, and have continued ever since. They put gravy on their fries. I think it's called "poontang."

Poutine is more eastern Canada, and cheese is part of it. You can get it at the Culver's burger chain (fries+cheese curds+gravy). The MacDonalds' in Canada have Malt Vinegar packets available.
