The Hutterites sell a product they call “beef bacon” in Alberta that is not too bad as a substitute, but it’s most definitely NOT bacon. As for both turkey and chicken “bacon”, having tried EVERY manifestation of both I could find:

NOPE!

Then there’s the VEGAN alternative. YUK!!

I feel your pain. I’m not supposed to eat anything made with grains. I’ve made tons of so called “bread” out of nut flours, and none of them taste anything like real bread. But you get used to it.

Can you have ham? If you can’t, pastrami is a good substitute. I have made corned beef from scratch, and I guess pastrami is corned beef that is smoked, instead of boiled or roasted.
As a matter of fact, you could probably make your own bacon by salting and smoking side pork. I guess it can be made without nitrates or nitrites, if those are why you can’t eat it. They also sell “uncured” bacon, now. I’ve had it. It tastes just like regular bacon.
