LOl hook em to cook em. Most fish caught in the Keys are eaten. We do make exceptions for a few however and many of the rules need to be tweaked since they are the product of dumb ass govt. types.
Man I would catch trout high in the mountains, clean them in the water... stick them straight in a pan with wild onions, butter and scramble some eggs.
or smoke them.
