Yes they will. The demo models are directly linked to Apple, and signal them with a "Find my iPhone" alert with location.
A few years ago my iPad was lifted by someone at a downtown SF store. When I got home, I tracked it from another device as it wandered around SF. Meanwhile, I sent messages to the screen with a contact number and asking it be returned, with a reward. I created an incident report with the police and BART authorities. It appeared to stop moving around at a downtown hotel and I forwarded that information to the police. Later that evening, I decided I waited enough and sent a command to wipe the device of all data. After that, if anyone tried to use it, it would display a message to connect to Apple iTunes for use. Without my ID, it was useless. I suspected it was a tourist, as they were at a hotel.
I got lucky, two weeks later BART notified me that it was turned in at BART. I asked them if anyone left contact information as I would give a reward, and they said it was turned in anonymously. Tourist must have given up thinking of using the iPad, and turned it in before leaving SF. I had it in an iPad travel bag, with other items, all was there. Side note, this showed me that the BART employees were honest enough to see it returned to the rightful owner (me). The Apple tracking system works!
