Not locking doors at closing with customers still inside is industry standard.
Im fairly certain it would violate fire codes to lock them in.
We turn off the sign and shut equipment down at closing time even if customers are lingering. People have come in, are disappointed to hear that the kitchen is closed, but leave without much fuss.
