To: Alas Babylon!

I do grow a lot of eggplant. One of my favorites veggies. I make Baba Ganoush, Moussaka and one of my favorites, dried eggplant chips in olive oil and salt. I dry them with the oil on so it dries too. Not as messy as it sounds. More like beef jerky eggplant.

Maybe my cookin’s not as good as a restaurant, but pretty yummy to me!

I have failed in growing eggplant the past 3 yrs..

I am gonna switch to getting my seedlings at home depot or Wal-Mart instead of the local nursery...the local nursery’s plants have sucked past few yrs.

Got a recipe for the dried eggplant chips? For years, I could never get eggplant to grow, but the last two years, I’ve had absolutely huge eggplants with lots of “fruit”. This year, I grew two Black Beauty eggplants in straw bales ..... when I had to clean the garden because a freeze was coming, I had 24 eggplants on my 2 plants. I knew I had a few, but didn’t realize so many were hidden under the leaves!! I make Baba Ganoush (love it), haven’t made Moussaka (but I often order it at restaurants) & I made a bunch of eggplant “fries” to try to use up my 24. I didn’t get through them all before they were a little too old/soft. Doing chips would have helped me use up a few more!
