What do they do, send it here on an SR-71 straight from the Slaughterhouse?
Beef is hung to age a couple of weeks. The sea voyage in refrigerated containers works out about right.
Fresh as in not processed (canned) or cooked I expect. Probably frozen, though sides of beef are often kept a couple weeks in cold storage before butchering.
