Don't want to argue translations, but from a Jewish perspective We will make man was a discussion with Angels. Per Rashi's commentary on the Talmud, the decision was that if there were those in heaven in G-d's image,not having them on earth might inspire jealousy. Nothing to do with "ownership" of animals, which are here for the benefit of man.
Much hash has been made about killing animals and eating meat to the brink of vegetarianism and animal worship. I don’t follow guesses about the plural, either, which guesses have developed in the cultures of several ancient empires. To do so would be like trying to revise Ezekiel’s message by trying to reinterpret it, or even trying to ignore it. Angels aren’t paid to make choices such as being jealous.
