Grass instead of corn fed cow butter is quite a bit better. You can pickup some at trader joes if you want to try it.

About to start my Spring diet. New and better kinds of butter are not a temptation I need at the moment!

From what I’ve read it’s both the cows’ diet and the type of cow.

There is a little less water in European butters...makes a difference in some foods like pastry.
