In the old days they made the patties. For over 40 years they have received frozen patties, 1/10 pound for hamburgers, cheeseburgers, and big macs, and 1/4 pound for quarter pounders. Weight before cooking.

in 1975 our frozen patties were 10/lb or 4/lb as I recall.

The small ones (10/lb) were what we used for the single cheeseburger / hamburger. On Saturdays I’d cook up 8 dozen (twice) to load the steam drawers (they did alright for fast food) just before the lunch rush (it was a mall - still standing, amazingly though the restaurants are long gone).

Yep, two rounds of 96 patties laid down on the grill - average sized grill I think (flat grill).

We easily sold out of all those burgers but mostly all we had to do for 2 hours was special orders and the chicken we made a couple of ways (pressure cooker pieces and breast sandwiches).
