straight people are not that stable.

Really?

I don't know anybody that has, or needs a shrink.

Are you in the workplace? Do you know more than a couple dozen people? What is your definition of stable?

I have worked with manic, depressed, sociopathic, and I presume 'normal' people over my working career. By stable, most were able to function 'normally' throughout their working lives. A few were not. I am not really sure a 'normal' person exists, and shrinks do not have a really good cure rate. IMHO, if you look really close and read between the lines, most people have issues.

Someone that doesn't go around freaking out, committing acts of violence, appearing drunk or stoned in public.

Probably queers or city people.

I live in a rural low-crime state.

You can usually find those people living in bars, or sequestered at home, bombed, sending for booze delivered via taxi. Or shooting up heroin under the overpass among the "homeless"...who are also usually whacked.
