We always checked our cookbook indexes to make sure Brunswick Stew wasn’t listed under Beef. “You know it’s chicken, right?” One indexer said, “Where I come from, Brunswick Stew is squirrel.” First I had heard that. Live and learn.

I have an old recipe for Brunswick Stew, but you better be hungry ha ha:
About 70 Squirrels
2 large stewing chickens
6 gallons of water
2 1/2 lbs salt pork
2 1/2 gallons lima beans
3 1/2 gallons potatoes
4 gallons peeled tomatoes
1 gallon carrots
2 1/2 gallons corn
1 gallon shredded cabbage
3/4 cup pepper
1 3/4 cup salt
2 1/4 cup sugar
onions or red pepper
When I was going through my mother’s recipes I came to this and never figured out why so much! She never made it for us. Just a family recipe handed down I guess.
