"What can be that combustible in a stone building?"

The exterior walls are brick and stone - the floor and roof structures are probably wood. Note that the story says the fire was "consuming the interior and roof."

That makes more sense.

My church is steel studs and cinder block. Very little combustible yet we had to add an extensive sprinkler system.
