Well, I am one of “they,” and I must disagree. We do know what we’re doing, which is following what G-d told our ancestors to do over 3,000 years ago. G-d also told us not to add or take away anything from the Torah. In Deuteronomy 13:1, He states: “This entire thing which I command you (the Torah), it shall you guard to keep it, do not add on it, and do not detract from it.”

With respect to your beliefs, even your own scripture says that “not one jot or tittle of the Law” (i.e. the Torah, the 5 Books of Moses) shall be changed until it’s whole purpose shall have been accomplished. Matthew 5:18. Yet...early Christians changed the Sabbath, eliminated other Holy days and dispensed with the dietary laws, all of which Jesus himself observed.

So WHO doesn’t understand what they’re doing?

Oh, and FYI, there are currently no sacrifices because there is no Holy Temple. Once the Messiah comes, it will be rebuilt and the sacrifices restored. Until that time, we Jews offer a permissible sacrifice by praying 3 times daily.
