I’m trying to learn about how the average Joe voter is supposed to find out about such things, and whether there are some cool resources I should know about.

From Patrick Ruffini on Twitter. He is some tied in consultant that has lots of good info on internal polls and stuff. He is not a Trump guy, that might bother you, but he has really good data. His social views are way out of line with mine, but he actually knows by name the good and bad delegates in each state. He and another guy have been tracking this.
