M’mmmm, that sounds good. Do you simmer the mushrooms in the sauce or cook them with beef?

Sounds good to me because I’m not much of a meat eater in the first place.

I dice them and saute’ them with the onions once the onions caramelize a little. I use about a two quart sized bowl of them. I frequently find mushrooms for almost give away prices if they are getting a little long in tooth. I like the portabellas because they give a nice dark rich color and taste to the chili. But I suppose you could use the regular white ones too.
