Well, when they reach the end of their useful life, there’s oxtail soup...I guess it’s a bit more palatable than horse.
But given the state of that country, I’m sure they wouldn’t turn down horse either.
Slow Cooker Oxtails
Ingredients:
one package oxtails, about 4-6 lbs.
2 medium tomatoes, diced
one large onion, diced
5 large cloves garlic, minced
one stalk celery, diced
1Tbsp thyme
one half cup sherry
1/2 tsp liquid smoke
salt and pepper to taste
Method:
Season oxtails and brown briefly, 2-3 minutes per side, set aside
Add all other ingredients to slow cooker, stir, add oxtails last
Cover and cook on slow for 6-8 hours. Serve over rice
Oxtails are simply cross-sectioned cow tails and do not come from oxen.
