About 10 years ago I went strictly low carb. My rule was nothing white accept cauliflower and cottage cheese. No flour, no sugar, no rice, no potatoes.
I tried to stick with eggs, cheese, real butter, meats, fish, nuts, non starchy vegetables, and berries or melons.
I would take a break one meal a week when we went out or there was something particular I was craving.
I’m not that strict with it now though. It is too much of a pain to cook normal meals for my husband and low carb for me so now I stick to low carb during the day and “normal” dinners.
Ran across Dr Sarah Hallberg a diet doctor at IU Arnett in Lafayette. She is a diet doctor Hers is a modified paleo diet. But she explains when, why we had the massive weight gain in USA. Not only do her patients loose huge amounts of weight without surgery diabetics get off insulin and other medical issues disappear She uses flour substitutes for all sorts of yummy looking dishes. Unfortunately it was Christmas when I bought the ingredients and I’ve lost the recipes.
My favorite : I bake small custards. Made with eggs and half/half. Each them for breakfast, dessert or just a snack. They’re great with maple sugar on top !
