Indeed. My music software and my multi-tracker both have cut-and-paste capability, but I have NEVER even learned how to use them. I record everything in real-time, and meticulously layer the vocals and instruments sometimes singing the parts hundreds of times.
I did The Hallelujah Chorus that way once...just for fun.
