Kale is almost as bitter as rhubarb, and it wilts down to nothing after a boil. If I want greens, I usually choose collards, white cabbage, mustard or turnip greens. Arugula, by the way is equally bitter and unappealing in my opinion.
I like collard greens and mustard greens are okay.
Other than that, I’m not much of a fan of greens.
Kale is excellent roasted in olive oil, garlic and salt and pepper. I couldn’t believe I liked it.
