since this was argued in the Supreme Court as a tax, will everyone be able to deduct the cost of the insurance premium

The premium for insurance was not the tax, the tax was the penalty for NOT buying insurance.

I don’t think so; the Supreme Court acknowledged that the law was changing the relationship between the government and the citizens, and that the only way the government could force someone to buy something was via a “tax” (in the same manner as public education, military spending, etc.).
