Why should U.S. forces cross over from Poland into Ukraine?

Yes, we must always abide by our NATO allaince agreements and I wholeheartedly support this, but NATO is a DEFENSIVE charter, and Ukraine is NOT a member of NATO.

If Poland lets the EU/Nato attack Russia from her boarders, how do you think that will play out?

The Poles HATE the Russians (and the Germans for the most part) but are under no illusions about starting the next World War.

We can't get to the Ukraine, and to be honest from reports I have heard from people there, I am not so sure we SHOULD support the coup government.
