I’m as big a fire eater as you’re likely to find, but there’s an odd background sweetness I find somewhat off putting (their ground chilies are much more my thing).
Still, how America has embraced this once alien cuisine makes me proud of how we assimilate and are open to reasonable, positive change, and no where is this more clearly illustrated than in our foods.

Rooster sauce is an acquired taste. Maybe too hot for most palates to handle.

BINGO, America is not supposed to be a polyglot culture but it should be a “Poly-Gut” culture!
