As an Irish American, my question is, what’s that?

My favorite back and forth, favorite, really, in ‘Band of Brothers’ is when Buck says to Mularkey, ‘what do you know about cooking? You’re Irish.’
Mularkey says, ‘Sir, if you have reservations somewhere else, I would be happy to join you.’

Well, I've heard that both Irish and English cooking have made great strides in recent years.
