They taste like chicken, ummm...so I hear.
The chicken farmers could produce millions of these birds.
The real goal is not to protect the birds, rather to shut down free enterprise , family farms & ranches, etc.
Actually, they’re ready-seasoned chicken.
They taste like chicken...flavored with sage. Sage hens (as they are also called) use sage in their craw like chickens use sand or pebbles.
As a consequence, the bird's meat is flavored with sage. Great eating.

They taste like chicken, because the are chicken. A wild version, but a member of the chicken family nonetheless.
If you read up on them you find out that just about every carnivorous animal that run in the same neighborhood think they are delicious. Those too small to eat the bird like the eggs.
Actually, they taste like hammered crap - at least in the fall, when the hunting season is/was.
The Shoshone told us at a sage grouse meeting about 10 years ago in Nevada that “the white man is stupid - he eats the sage grouse in the fall, when it tastes horrible. Spring is the time to eat sage grouse.”
The USFWS reps nearly lost their heads upon hearing this.
