There is one simple answer to race baiting. Read this ten times so you can recite it whenever someone accuses a certain category of people of being racists:
“As horrible as being a racist is, there is one type of person who is even more despicable, and that is one who believes he or she has the moral authority to look into the hearts of entire groups of people and delare them racist in an attempt to excise paltry political gain. Those who prejudge others in this way truly represent the crudest, lowest form of racism.”
