To: ROCKLOBSTER
Real Clam Chowder: 2lbs or more of steamers or little necks soaked and steamed with chopped yellow onion.

Drain the clams reserve the stock.

Shell the clams.

12oz of diced salt pork fried in 8oz of butter until crispy.

Last nights mashed potatoes.

One quart light cream, one quart heavy cream.

Fry salt pork.

Bring stock, shelled clams, salt pork, and some more onion to a boil then lower to a simmer.

Cook until onion dissolves.

Add cream and another 8oz of butter, thicken with mashed potatoes to taste.

Real Down East chowder.

Serve with Oyster Crackers.

Oh my goodness. Mashed potatoes and salt pork!

I’ll think about it.

Had the oyster stew for lunch...oh my goodness those oysters were sooooo good. They positively melted in my mouth.

You do know they were purchased at the super seafood section, it they weren’t in a tin or anything.

They were good....got two servings out of it plus one for AB.

Eight dollars for that little container but the juice made the milk take like oysters and the oyster were, as I said, melt in your mouth.

If an oyster can melt in one’s mouth.
