“Living off the grid” means different things in different places. How was she handling her human waste? If she had no water it might be hard. Especially if she is in a residential development.

Call Home Depot and they will deliver a self contained composting toilet.
Just an idea.
Did she have an outhouse? Was there an overwhelming odor? I think that more information is needed.

The same way we, and several neighbors did in downtown Denver in a partially built new home in a subdivision. The bathroom was not in so we used an outhouse! Did just fine.
