I’m not bound by Jewish law. If I baptize my kids, they are Catholic. In fact, in order to have an inter-faith marriage, I will have to promise my future pastor that I will do the best of my abilities to raise the kids Catholic.

Your right and priviledge but it's a clash of sorts and falls back on your belief system. By Christianity, they will be Catholic, by Judaism they will be Jews. Depends on how you raise them and that is you and your future wife's choice. In Jewish terminology, it's called “assimilation”.
