the obvious problem being the fire engine that has to respond to Chong’s House of Chop Suey.

Such a business probably wouldn't be found in Monterey Park. Chop suey, a dish created decades ago by Chinese immigrants, is disappearing from the menus of Chinese restaurants as as Sino-Americans increasingly want "authentic" Chinese food.

The “America Eats” show did a fascinating episode on the creation of the `chop suey’ dish by Chinese immigrants, the heyday of chop suey restaurants in America, and their decline as customers of all ethnicities sought authentic Chinese fare from the many regional cuisines of China.
