How are they going to avoid the malnutrition lawsuits? Are they going to hand out vitamin supplements with every meal? If they do, will they expell students for handing them to eachother like they do with aspirin?

Having read the whole article, and knowing something about nutrition, I would say these diets are higher in vitamins and minerals than most cafeteria diets. They are also not lacking in protein content.
