That’s a dangerous attitude that has killed a lot of people who shot just once and then lowered, or looked over the gun to see what their shot did giving the bad guy a chance to kill them. There’s a reason most self defense instructors, and police, teach to shoot center mass and keep shooting until the threat is neutralized.
In a life or death situation odds are it will happen very fast and in conditions far less favorable than your local gun range. You will be scared, adrenaline will be pumping through your blood stream. Your fine motor skills are seriously compromised, odds are good you will miss more than you hit. And even if you hit him there is no guarantee one shot will stop the threat. Yeah, a solid shot to the head with an adequate caliber will probably stop your bad guy but it’s dark, or dim, and he’s moving and you’re moving. You sure you can make that head shot? A shot to the heart may be fatal but it doesn’t have to be immediately incapacitating. If the bad guy is on drugs or just really committed to killing you he may have time to do you harm even if he’s dying.
Me? I’m going to shoot him with .40 caliber hollow points until he stops whatever he was doing that prompted me to shoot him in the first place.

Although I've never actually shot at someone under these circumstances, I came damn close once and I can tell you, you won't be as calm and in control as you think. 2 things will dominate your mind: a)you are about to kill a man b) will I even be able to hit him because I'm shaking so much.
Few things get me into a frightened state, but that did.
The consequences are permanent. I'm not saying it's wrong, I'm just saying even if you do save your own life by killing someone, you still lose no matter how much of a lowlife he was or how much he deserved it.
