Found not guilty or not in state criminal court or civil court, Eric Holder has the option of trying him in federal court on civil rights charges. It's happened before.

Yeah, Rodney King comes to mind. But I think Zimmerman would have to be acting in a governmental capacity for Civil Rights charges to apply.
