We always do the the pit, 5 foot deep, with the pig in a wetted canvas sack and the fire on top. Then bury it for 8 hours or so...How do you it?
We slide him into a length of 24" well casing. Pull the fire back and go for about 8-10 hours just raking a few coals under to keep it at 250 to 275.
