My guess is that you were consuming more carbohydrate than your body needed. What it doesn’t need is stored as fat.

Is it because you no longer have spikes in blood sugar since you’ve eliminated a huge source of carbohydrate, not to mention you’ve cut your cravings for starchy stuff way down? Oh, and you’ve significantly reduced your risk of celiac disease because the gliadin in wheat has been eliminated from your diet?
