Oh darlin!
Even to boil hocks with black eyes on New Years... there’s those little treasures that fall off the bone. I’ll cool them off and pick every tasty morsel to put back in the batch, no matter how tiny. My kids will savor the rewards of the fastidious cook, and they will help, and learn. Someday, they’ll be serving me hoppin john, cooked with the same respect I taught them! I love my life! I love cooking!
A hambone? Mother lode!
The hocks are SUPAH! I boil them with
fresh green beans. Oh yeah .. I was purty
stunned to see all the sweet treasures that
fell out of that massive hambone .. woohoo!
One thing I’ve found I love that I cook in
with rice, veggies and beans is smoked pork
riblets. Had not noticed them before the last
few years. Gets ‘em all filled with that
good smokey bbq taste and then you nibble
off what meat there is on the bones. mmmmm
