Are we required to use iron sights? Or are optics OK? My old eyes have trouble focusing.

You can use whatever sights you want! That is part of what they teach. Iron sights, scopes, whatever you are good with.
You can also use whatever firearm you are comfortable with-most people will bring the 10/22, maybe an occasional AR-clone, and maybe even a M-i Garand. No matter! They just are all about teaching basics, shooting safety, shooting skills, with a little bit of history thrown in for extra fun.
You will do fine. Enjoy it!
