i think he's right,i've heard of inspectors b!tching about temperature that was too LOW... but never too high!

I have about two dozen friends and acquaintances in the Bay Area meat packing industry, and to a man the word is Stu wouldn't "comp" the inspectors.

For the inspectors, it's an envelope full of cash, for the cops it's all the best meat they can eat.

The cops are smarter, they don't tell ya how to make your product, they just tell ya how good it tastes.
