Horse has a finer grain, is more tender and a touch sweet.

Bison is coarser, can be tough and has a richer flavor than beef.

I like ‘em all.

I had a Bison burger years ago, I think it was in Buffalo Wyoming, and it was the best burger I have ever tasted.
