Interesting. I would guess though that the finer grind sugars would lend themselves to faster reaction rates. Or is it not enough of a difference to matter?

It matters. Too fine, it compacts and it burns slowly rather than the ignition propagating along the surfaces. It's the reason gunpowder is granulated rather than a fine powder.
