That’s why one person handles it. Many things can be accomplished that do not need to be handled by the waitstaff. Ice machines unplugged hours before, menu planning snafus, lack of toilet paper. Do you know that there are products on the market that smell like “farts”. They are gag items - in tiny spray bottles and last quite awhile. Endless possibilities.
